
We’re so spoilt with the abundance of kaimoana up and down the Motu and lets keep it that way!
The humble crayfish roll is a delicious way to stretch out your haul of crays.
It keeps it simple, does justice to the lovely sweet meat and for a contemporary twist you’ll see I’ve spiked it with a little hot honey.
Ingredients
- Small breakfast rolls
- Tartare Sauce either homemade or store bought
- Honey
- Crayfish meat
- Cos lettuce
- The Original Smoke and Spice Original seasoning
- Chives
Method
Give the cray meat a quick steam
Heat 2 tbsp of honey and add a tsp of chilli flakes
Open the rolls and line with lettuce
Mix your crayfish meat with your delicious tartare adding a small pinch of seasoning and load a generous portion into the roll, drizzle with hot honey and sprinkle with fresh chives.
This recipe is pretty basic so it’s up to you to tweak things. The hot honey is a new favourite on all seafood…it’s really beautiful on smoked kahawai too!
